I'm just going to make some simple eyes for my unicorn.  If you'd like to make something a little fancier. Ron's Toons has some great eyes in his Shapecat Tutorial.

Set your fill color to white, and draw a new ellipse for the eye. Now change your fill color to whatever color you like, I chose blue, and draw another slightly smaller ellipse.  Change your fill color back to white, and draw a very small ellipse for a highlight.

Arrange these like so:

 With the object selector tool, draw a box around the eye you just make.  This will select all of the pieces so you can move them onto the unicorn.

If the eye is too big or too small, click one of the corner nodes and drag it out to make it bigger, or in to make it smaller.  Now copy, and paste as a new vector selection.

Now change the fill color to none, and draw a small ellipse for a nostril.  Copy and Paste.

 

Mane & Tail!

Set your Fill Color now to whatever nifty color, gradient or texture you want for your Mane and Tail.  Now click on the Draw Tool.

With the following settings, draw the mane and tail.

  (Don't forget you can right click and choose Arrange, and send to bottom if you need to. Just remember to select with the Object Selector Tool first.)  If you decide you don't like the color of something, Select it with the object Selector Tool, Choose Properties, and change it!
